In Oklahoma, students in the Stilwell Public School system recently enjoyed salads in the cafeterias made with fresh lettuce harvested in the new greenhouse that was purchased through their USDA Farm to School grant. Stilwell Public Schools understands the need and importance of a successful Farm to School Program. Their District is located in a farming community with the space and support necessary to succeed in providing students with healthy alternatives.
To encourage high school students to try the salad that had been grown on campus food prep classes provided homemade dressing for the salad served this week.
The lettuce was grown by Mr. Hendrix's Botany and Environmental science classes. The students are growing several crops that will be used in the school cafeteria this year. While getting hands on experience in gardening they are also learning the importance of being able to grow their own crops and the roles plants play in our ecosystems.
